Wokje van lentegroente

Voor 4 porties

-  5 koppen gesneden lentegroente: groene asperges, broccoli, bloemkool, andijvie, peultjes, wortelen, cougette, paprika.
-  3 eetlepels extra vierge olijfolie.

-  1/2 kop amandelschilfers.
-  3 eetlepels argananolie
-  fijngesneden lente-uitjes
-  peterselie of koriander.

Specerijen

-  1/2 koffielepel asafoetida.
-  1/2 koffielepel mosterdzaad.
-  1 koffielepel komijnzaad.
-  1 eetlepel fijngesneden verse gember.
-  1 koffielepel kurkuma.
-  1/2 koffielepel zwarte peper.

Bereiden

  • Verwarm de olijfolie en bak hierin de asafoetida, het mosterdzaad en het komijnzaad.
  • Wacht tot de mosterdzaadjes beginnen te knisperen en voeg dan de groenten, de gember, de kurkuma, zwarte peper en zout toe.
  • Roerbak tot de groenten beetgaar zijn (mensen met een zwakkere vertering kunnen de groeten wat gaarder laten worden.
  • Rooster de amandelschilfers in een platte koekenpan.
  • Werk het gerecht af met de amandelschilfers en de arganolie.
  • Voeg naar smaak nog wat lente-uitjes, peterselie of koriander toe.
